Chicken Recipe

The chicken is a free-range chicken and rice dish. In Goiás it is traditionally served with pequi and guariroba (bitter palm), while in Minas Gerais it is cooked with saffron, bean tutu and vinaigrette (optional). See Specialfood suggestion to prepare chicken below!

Ingredients for making Chicken:

 1 unit of free-range chicken (without giblets)

 1 unit of onion

 2 garlic cloves

 3 tablespoons of olive oil

 1 can of peeled tomatoes

 1 unit of green pepper

 1 can of green corn

 1 can of peas

 2 cups of rice

 2 cups of water (480 milliliters)

 1 handful of green scent

 2 chicken broth tablets

 1 unit of lemon

 1 pinch of salt

How to make Chicken:

Start the chicken recipe by cutting the chicken into pieces and seasoning it with lemon juice. Set aside for 15 to 30 minutes.

In a pan, place the oil and the chicken in pieces, letting it brown slightly. Chop the onion, garlic, peppers, tomatoes and the green scent and add to the pan, stirring to cook evenly.

After a few minutes add the rice, let it fry a little, and add the water and the broth tablets. Season with salt and cook the chicken over a low heat, covered pan.

When the rice is almost done, the broth should be gone. Add the peas and green corn, stir, cook for a few more minutes, and serve the hot chicken garnished with parsley. Enjoy your food!
